Executive Sous Chef/行政副總廚 (Cantonese Cuisine/粵菜)

Job Summary/工作內容

  • Plan, develop, and change Chinese/Cantonese a la carte menus and private dining room set menus with attention to seasonality, ingredients, service cost etc. 
  • Provide training, guidance, and direction to staff 
  • Ensure smooth kitchen operations and maintain a sanitary and safe work environment 
  • Oversee ingredient sourcing for items such as produce, seafood, meats and more 
  • Communicate with customers/clients and adjust menu based on needs

Job Requirements/條件要求

  • Food Safe Level 2 Certificate 
  • Minimum 5 years experience delivering high end  Cantonese cuisine in a free-standing or hotel Chinese restaurant 
  • Excellent understanding of seafood and Crustacean quality specifications 
  • Superb culinary skills using wok and steamer 
  • Strong leadership abilities 

Languages: English and Cantonese

Education: No degree or diploma 

Credentials (certificates, licenses, memberships, courses, etc.): Food Safety Certificate 

Experience: 5 years or more

Cuisine Specialties: Cantonese 

Work Setting: Restaurant, formal dining room; Bar; Health care institution, facility or clinic

Transportation/ Travel information: Public Transportation is available 

Work Conditions and Physical Capabilities: Fast-paced environment; Work under pressure; Attention to detail; Standing for extended periods; Bending; Crouching; Kneeling; Tight deadlines 

Ability to supervise: 11-15 people 

Food Specialties: Fish and Seafood 

Sous-Chefs Specific Skills: Supervise activities of specialist chefs, chefs, cooks and other kitchen workers; Demonstrate new cooking techniques and new equipment to cooking staff 

Chefs and Specialist Chefs specific skills: Create new recipes, prepare and cook complete meals and specialty foods for events such as banquets; instruct cooks in preparation, cooking, garnishing and presentation of food; Supervise cooks and other kitchen staff. 

Executive Chef Specific Skills: Recruit and hire staff; Plan and direct food preparation and cooking activities of several restaurants; Plan menus and ensure food meets quality standards; Estimate food requirements and food and labor costs; Supervise activities of sous-chefs, specialist chefs, chefs and cooks; Arrange for equipment purchases and repairs ; Consult with clients regarding weddings, banquets and specialty functions.

The Opportunity

Opening for residency in early 2019, OPAL will be a boutique community of retirement suites on Vancouver’s west side, offering refined amenities and service that are designed with the highest standards in mind. This home will be a gathering place for family, friends and community. 

As the Executive Sous Chef you are responsible for the startup and all-around success of OPAL’s state of the art daily kitchen operations. You lead the development and delivery of superior Cantonese cuisines and inspire and train a food service team to deliver a superior dining experience for residents.

Reporting directly to the Executive Chef, you will oversee and develop all Chinese food related functions including the dining room, private dining room events operation and occasional chef’s table, cooking demonstrations and seasonal events.
